Here is what you’ll need!
LOMI-LOMI SALMON POKE BOWL AS MADE BY BROOKE WILLIAMSON
INGREDIENTS
6 ounces fresh salmon
Salt
1 ounce Persian cucumber, cubed small
1 ounce tomato, cubed small
1 ounce scallion, sliced
1 ounce onion, diced
2 ounces shoyu dressing
12 ounces cooked short grain sushi rice
Nori, sliced (roasted, unseasoned seaweed)
Shoyu Sauce
1 teaspoon fresh ginger, grated
1-2 cloves garlic, grated
1 cup soy sauce
¼ cup granulated sugar
¾ cup rice vinegar
¼ cup mirin
¼ cup sesame oil
PREPARATION
1. Place salmon on a wire rack and season with salt on both sides. Cover and refrigerate for 2 hours.
2. Take cured salmon out of the refrigerator, rinse and pat dry. Slice into cubes.
3. Mix salmon, cucumber, tomato, scallion, and onion in a bowl.
4. In another bowl, combine the ingredients for the shoyu sauce. Add sugar as early as possible so all the grains are dissolved.
5. Spoon shoyu dressing on poke bowl.
6. In a small bowl, add cooked rice, top with poke ingredients, and spoon additional shoyu dressing to taste.
7. Garnish with sliced nori and serve immediately!

Fine Dining, Hawaiian FOOD and Service!
Mama’s House Fish House in Paia section of Maui, Hawaii was recommended by our driver, helicopter pilot and to my sister/friend when she went waterfall climbing! The couple she met on adventure made sure we make it to restaurant, by making reservations to celebrate her 50th Birthday!
ENJOY the scenery, food and MANY desserts we had the opportunity to eat. The waiter was EXTREMELY knowledgeable of the menu they print out daily, since they catch fresh fish each morning. The service from the valet to the restroom was top notch!

I’m just getting back from exploring Maui! There is so much I could say about Maui.
Hawaii is a culture that is filled with fascinating customs, music, traditions and values.
Speaking about values, Aloha not only means hello, goodbye and love, it also means sympathy, kindness, compassion, affection.
So you see, this word is more than a greeting or expression, it is the basis of what Hawaiians consider to be one of the culture’s core values.
Overall, the Hawaiian culture is sooo rich, the people are respectful of the land and each other, including you and me. Maui is truly an unique and a special place.
And yes, I recommend you travel Maui, Hawaii. Add it to your vision board like it did or your list to “Go to places” and know there is more than the sunsets, sunshine, beaches and sand to see.
Hopefully I was able to capture these and much more for you in the many pictures and short videos taken.
