FERMENTED FOODS RECIPES HOW TO HAWAIIAN FOOD (POI)

Hawaiian Poi
Serves 4-6

1-2 small taro (roughly 1/2kg)
Water
Salt

1. Cube and steam/boil taro until tender
2. Mash with mortar & pestal or in a bowl with a potato masher. Alternatively, you can use food processor
3. Slowly add in water depending on desired consistency (see note)
4. Pinch of salt to season
5. Enjoy fresh, or cover mixture with a thin layer of water to keep from drying and place a cloth over the bowl to ferment overnight – 2 days (depending on desired flavour)

*note: desired thickeness based on preference. “Two finger poi” – add less water for thicker consistency; easily scooped with two fingers
“Three finger poi” – add more water for thinner consistency; easily scooped with three fingers
