Enjoy amazingly tasty Hawaiian food in the comfort of your own home. Huli-Huli chicken is a grilled chicken dish in Hawaiian cuisine. It sizzles with the flavors of brown sugar, ginger, soy sauce and pineapple juice.
Ingredients for chicken brine:
One whole chicken cut into 2 pieces with skin
2 tablespoons sugar
2 bay leaves
1 teaspoon salt
1 tablespoon white vinegar
1/2 teaspoon garlic paste
1/2 teaspoon ginger paste
1 teaspoon sriracha (hot sauce)
1/2 teaspoon dry rosemary
2 liters water or enough water to submerse both chicken pieces

Ingredients for dry rub:
1 ½ teaspoon cumin powder
1 ½ teaspoon onion powder
1 teaspoon ground black peppers
1 teaspoon garlic powder
2 teaspoon sugar
1 teaspoon cayenne pepper
1 teaspoon paprika
1 teaspoon salt

Ingredients for huli huli sauce:
2 cups pineapple juice
1/2 cup dark brown sugar
1/4 cup ketchup
1 ½ tablespoon soy sauce
1 tablespoon barbeque sauce
1 ½ teaspoon paprika
1 teaspoon freshly grated ginger
1/4 teaspoon salt
