Garlicky Kālua Pork | Slow-cooked Kālua in Oven | Hawaiian Food
This is my version of Kālua Pork made in the oven. Traditionally, Kālua is made in an imu, which is an underground pit oven with hot rocks (usually lava rocks) which steams the pig whole. Since we don’t have the capabilities of digging our own imu here in Alaska in the middle of winter, we are cooking it up in our oven at home. Many people have their own version of making Kālua, this is just the way I like to make, especially with the garlic cloves that essentially dissolve during the slow cooking process. The longer you bake it in the oven, the better it absorbs flavor. Here in this video I cooked it for 5 hours at 300 degrees, but if I had more time then I would have liked to cook it at a lower temperature for longer such as 250 degrees for 8 -12 hours.
Recipe for Jen’s Garlicky Kālua Pork:
8-10 lb Pork Shoulder/Butt
2 Garlic Bulbs
1/4 cup Hawaiian Salt or Sea Salt
1 1/2 bottles of Liquid Smoke
6 cups of water
Preheat oven [250 if cooking for 8-12 hours] or [300 if cooking for 5-6 hours].
Peel your garlic bulbs. Cut slits in pork and stuff with garlic cloves. Rub pork with Hawaiian salt, use more or less depending on the size of the pork. Remember – you can always add, but you cannot take away so if you think it’s too much salt, then add only what you feel is right and adjust the flavor at the end of cooking. Mix your liquid smoke with water and pour over pork. Cover well with a lid or with foil. Set in oven for [250 if cooking for 8-12 hours] or [300 if cooking for 5-6 hours]. Kālua when done will fall off the bone. Enjoy with rice!
*Optional: add chopped cabbage to the end of the cooking process, let sit in the pan with the Kālua in the oven for about 10 minutes before serving.

It’s one of the hardest restaurants in the world to make a reservation, and that’s because it’s one of the most insane, thought provoking, creative, and full rounded dining experiences you can have in the world. It was not just a meal, but an entire journey, a meal with a message behind every dish.
50 courses – Although many were just a single bite, there were 50 different course tasting, and the meal lasted 5 ½ hours. We journeyed from room to room, each with its own unique design, artwork, and theme.

Copenhagen, Denmark – If you look at a map, you’ll see that Denmark has an immense amount of sea coastline – from the different islands and peninsulas that make up the country. Seafood has and always will be a major part of Danish food and culture. And so today we’re focusing on seafood in Denmark, starting from the source of the fishermen to some amazing people serving incredible seafood.
Fishing port – To get started in the morning we first drove about 30 minutes outside of Copenhagen to a small fishing port to meet up with a fishermen and see his fresh catch of the day. Most of his catch was cod, and a few trout.
Kødbyens Fiskebar – To get the seafood tour started we then drove over to the Meatpacking district of Copenhagen and to a restaurant called Kødbyens Fiskebar, a seafood restaurant serving a modern take on Danish seafood. Their dishes are even tastier than they look, and they are some of the most beautiful seafood dishes I’ve ever seen, so delicate and artful. The food was undoubtedly fresh, and we had an amazing meal.
Cykelkokken – Chef Morten Kryger Wulff (https://www.instagram.com/cykelkokken/), also known as the bicycle chef, is an amazing man who has created a custom bicycle kitchen. After seeing some of the urban hanging seafood gardens, we then got started cooking. Chef Morten made oysters and champagne, followed by a stir fry of vegetables and mussels in a spinach leaf wrap. Gourmet food, amazing people, and an incredibly fun experience. Thank you to Chef Morten and the entire team from Cykelkokken. Highly recommended when you’re in Copenhagen!
Krogs Fiskerestaurant – Seafood Restaurant – Finally to finish off this seafood tour of Copenhagen, Denmark, Esben and I went to Krogs Fiskerestaurant, one of the original seafood restaurants in Copenhagen, a legendary restaurant. We knew exactly what we wanted to order, the moment we sat down – the Royal Danish Seafood platter. It was everything I had expected and more. A wonderful classic restaurant, and truly a Royal Danish seafood experience! Total price – 1,510 DKK ($225.58)
